Soy is an Asian crop with a centuries-old tradition and is now recognised worldwide as a rich source of protein and energy. This is also the case in/from Europe. High nutritional values, essential amino acids and good metabolism meet all the requirements of contemporary foods. In textured form as steaks, shreds and granules (as a vegetable alternative to minced meat), soy is a popular and versatile ingredient in vegan and vegetarian cuisine. In addition, soy drinks are marketed as a vegan milk alternative, which also serves as a base for fermented products such as yoghurt substitutes.
