Textured Proteins as Granules

Vegetable textured proteins are available in granule form with different sizes. Due to their high protein content, they are mainly used as meat substitutes. Granules are used in the preparation of vegetable sauces and ragouts, for pasta fillings in tortelloni or ravioli, and for meatballs or sausage mixes. The granules are at their best in burgers, where they can be used to create perfect vegetable doubles of meat or fish variants.
