Lupin Flour Untoasted
The enzyme-active lupin flour is used in the dough preparation of white biscuits and toast bread, refining the dough and brightening the bread crumb. A significantly higher water binding capacity and improved knead tolerance are further properties of this lupin flour. The enzyme-inactive lupin flour is produced for us at the Austrian mill Witzmann. The enzyme-inactive finely ground lupin flour is also available in organic quality.
