Liquid Lecithin
We can supply liquid lecithin from soybeans or – if allergens are to be excluded – from sunflowers. In baked goods, liquid lecithin softens doughs and facilitates processing by ensuring better distribution of ingredients. Lecithin also reduces the tendency of the final product to harden and extends its shelf life. In the production of wafers and confectionery, liquid lecithins are mainly used as a release agent. When added to chocolate, they give the mixture the right viscosity and the product a more workable consistency.
