Linseed
Linseed is the seed of the flax plant, which used to be cultivated as a fibre plant for the production of linen. The plant has largely lost its importance as a source of fibre, but flax seeds are still popular as a food. The seeds are particularly valued for their high content of omega-3 fatty acids in the linseed oil they contain. For people who avoid fish in their diet, linseed and linseed oil are thus important sources of nutrients. Linseed is often found as a baking seed in bread and rolls. In addition, ground and swollen linseeds can be used as a vegan egg substitute, for example in baking. They are also considered a regional alternative for chia seeds, which are advertised as a “superfood”.
