Lecithin on Carriers
Lecithin on carriers is used in baking agents as it strengthens the gluten structure, improves the aerological properties of the dough, facilitates rising and increases the volume of the dough. Supported lecithin is excellent as a universal semi-finish for wafers, biscuits and baked goods as it distributes the fat evenly throughout the dough and also acts as a release agent.

- Soya lecithin supported on wheat carrier
