Lecithin Powder
Lecithin powder, whether sunflower or soy powder, makes doughs more workable and softer, resulting in greater uniformity of the final product. Lecithin powder favours better crumb development, more homogeneous alveolisation and a finer crust.
It is easy to dose and can also be used as a release agent in the production of wafers. Lecithin is used in powder form in the production of extruded raw materials to improve the breaking strength and texture of snacks and to increase their gloss. Hydrolysed soya and sunflower lecithins offer more stability in oil-water emulsions due to their hydrophilic properties.
