Dietary Fibre
Dietary fibre easily absorbs water, fat and moisture and makes doughs for baked goods, meat and fish fillings, creams and sauces more workable. Using fibre in doughs makes it easier to freeze ready-to-eat foods and slowly thaw frozen foods. The absorption of liquids by the fibres ensures that canned or packaged meat remains soft and that vacuum-packed products release less liquid.
The dietary fibres we offer are divided into soluble and insoluble in aqueous solution, with particular emphasis on soluble oat fibres, which are rich in beta-glucans.
